Mama Pacha Sabor Sofrito

 

There’s nothing like a fresh batch of sofrito to make your whole kitchen smell like home. Once you make it, you’ll want to add it to everything… and honestly, you should.

 

Ingredients

  • 2 Large Onions

  • 1 Large Green Bell Pepper

  • 1 Red Bell Pepper (Optional)

  • 8–10 Garlic Cloves

  • 3–4 Ajíes Dulces (If Available)

  • 1 Bunch Fresh Cilantro

  • 1 Bunch Recao/Culantro (If Available)

  • 1 Tablespoon Mama Pacha Sabor Sazón

  • 1 Cup Olive or Vegetable Oil (Adjust for Desired Texture)


Preparation

1.Wash and roughly chop all vegetables.

2. Add onions, peppers, garlic, ajíes dulces, cilantro, and culantro to a food processor.

3. Pulse until fine but still with texture — avoid liquefying.

4. Add oil and sazón; pulse again to combine.

5. Transfer to airtight containers or ice cube trays.

Yield & Storage

  • Yield: 3–4 cups

  • Refrigerate: 5–7 days

  • Freeze: 3–4 months
